Dehesas y Viñedos de Navamarínfacilities have the latest technological advances in the wine sector, respecting the traditional art and values, prioritising quality over quantity.
- 13 deposits, where fermentation is controlled, of 15,000 liters (3,960 gallons) each:
- For red wines temperatures between 77ºF and 82ºF (Not less than 15 days, temperature is obtained by wine tank covers)
- For white wines 59ºF (15ºC).
- Red wines are pumped over several times everyday.
- 15 deposits, for storaging, of 15,000 liters (3,960 gallons) each
- 8 isothermal deposits of 8,500 liters (2,246 gallons) each.
- 2 isothermal deposits "Floating tops" of 8,500 liters (2,246 gallons) each.
Bottling plant with an automated continuous process (bottle washing, microfiltering, corking with a nitrogen injection, capsule, label, back label and packaging)
Labs for the analysis, control and evolution of the different parameters: PH, acidity, glucose, tannins, polyphenols, etc. Analysis is performed during the whole process and includes soil, plants, fruits and wines. This is also done to research and define our different blendings.
600 square meters with 500 barrels of American and French oak. The dark cellar has an automatic control for the temperature and humidity. (Constant temperatures of 59ºF-61ºF and constant humidity of 70%). Wines from the different variety of grapes are sent directly to the barrels, without being filtered before.Blending is made afterwards.
Perfect combination between fruit and wood. In this cellar you can also find the bottle racks, used for still wines.
Manufactured and packed product warehouse , ready to sell. It has the same features, in terms of temperature and light, as the ageing cellar. Shipping to Spain and foreign countries is made from here.

All the varieties of Aldonza wines are tasted in this room, which is underground, where light and temperature conditions are controlled.
